These Spicy Black Bean Sliders turn cooked High Plains Black Beans into small, flavorful patties with onion, garlic, jalapeño, smoky spices, and a crisp skillet finish. Serve them on slider buns with fresh toppings and chipotle mayo or spicy aioli for a hearty bean-forward meal.
Ingredients:
2½ cups cooked High Plains Black Beans
½ small yellow onion, finely diced
2 cloves garlic, minced
1 small jalapeño, seeded and finely diced
½ cup breadcrumbs, plus more as needed
1 large egg or flax egg
1 teaspoon ground cumin
1 teaspoon chili powder
½ teaspoon smoked paprika
¼ teaspoon cayenne pepper, optional
1 teaspoon salt, plus more to taste
½ teaspoon black pepper
2 tablespoons olive oil
10–12 slider buns
For serving: lettuce, tomato slices, avocado slices, chipotle mayo, spicy aioli, or pickles

How-To:
Add cooked black beans to a large bowl and mash with a fork or potato masher, leaving some beans partly whole for texture.
Stir in onion, garlic, jalapeño, breadcrumbs, egg, cumin, chili powder, smoked paprika, cayenne if using, salt, and black pepper.
Let the mixture rest for 5 minutes so the breadcrumbs can absorb moisture.
Shape into 10–12 small slider patties, adding more breadcrumbs one tablespoon at a time if the mixture feels too wet.
Heat olive oil in a large skillet over medium heat.
Cook patties in batches for 3–4 minutes per side, until browned and heated through.
Transfer cooked patties to a plate and repeat with remaining patties.
Serve on slider buns with lettuce, tomato, avocado, chipotle mayo, spicy aioli, pickles, or your favorite toppings.
