This silky Cranberry Bean Pie blends cooked High Plains Cranberry Beans with brown sugar, milk, butter, eggs, vanilla, and cinnamon for a smooth, lightly spiced dessert in a graham cracker crust.
Ingredients:
1 cup cooked High Plains Cranberry Beans, mashed or pureed
½ cup brown sugar
½ cup milk or coconut milk
¼ cup melted butter
2 large eggs
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
¼ teaspoon salt
1 9-inch graham cracker pie crust
Optional topping: whipped cream or powdered sugar

How-To:
Preheat oven to 375°F.
In a large bowl, combine mashed or pureed cranberry beans, brown sugar, milk, melted butter, eggs, vanilla, cinnamon, and salt.
Whisk or blend until smooth.
Pour the filling into the graham cracker crust and spread evenly.
Cover and bake on the middle rack for 45 minutes.
Remove cover and bake for 15 more minutes, or until the filling is just set and the center is only slightly jiggly.
Let cool before slicing.
