Creamy High Plains Mayocoba Beans, spicy buffalo sauce, Havarti, and cream cheese are baked until warm and melty, then spooned into crisp lettuce cups for a fun appetizer or snack.
Ingredients:
1 cup cooked High Plains Mayocoba Beans
¾ to 1 cup buffalo sauce, depending on desired heat
4 ounces cream cheese, softened
½ cup shredded Havarti cheese
¼ cup sliced green onions
1 tablespoon ranch seasoning or 2 tablespoons ranch dressing, optional
Butter lettuce leaves, for serving
Extra green onions, for garnish

How-To:
Preheat oven to 425°F.
In a medium bowl, combine cooked Mayocoba beans, buffalo sauce, cream cheese, Havarti, green onions, and ranch seasoning or dressing, if using.
Spread mixture into a small baking dish.
Bake for 25–35 minutes, until hot, creamy, and bubbling around the edges.
Let cool slightly.
Spoon the buffalo bean mixture into butter lettuce leaves.
Garnish with extra green onions and serve warm.
