These Richlea Lentil Sloppy Joes are a hearty, plant-forward take on a classic sandwich. Cooked High Plains Richlea Lentils simmer with tomato sauce, onion, bell pepper, and smoky-sweet seasoning until thick and scoopable.
Ingredients:
2½ cups cooked High Plains Richlea Lentils
1 tablespoon olive oil
½ medium onion, finely diced
1 bell pepper, finely diced
2 cloves garlic, minced
1 cup tomato sauce
2 tablespoons tomato paste
1 tablespoon brown sugar or maple syrup
1 tablespoon apple cider vinegar
1 tablespoon Worcestershire sauce or soy sauce
1 teaspoon chili powder
½ teaspoon smoked paprika
½ teaspoon salt, plus more to taste
¼ teaspoon black pepper
4–6 buns, for serving
Optional toppings: pickles, slaw, or shredded cheese

How-To:
Heat olive oil in a skillet over medium heat.
Add onion and bell pepper and cook until softened.
Add garlic and cook for 1 minute.
Stir in cooked lentils, tomato sauce, tomato paste, brown sugar or maple syrup, vinegar, Worcestershire or soy sauce, chili powder, smoked paprika, salt, and black pepper.
Simmer until thickened, stirring occasionally.
Taste and adjust seasoning.
Serve warm on buns with desired toppings.
