This cozy Pizza Bean Bake brings together tender High Plains beans, marinara, Italian seasoning, melty cheese, and classic pizza-inspired toppings in one easy skillet-style dish. It has all the saucy, cheesy comfort of pizza night, with beans as the star.
Ingredients:
3 cups cooked High Plains Great Northern Beans or Pinto Beans
1 tablespoon olive oil
½ small yellow onion, diced
3 cloves garlic, minced
1 bell pepper, diced
1 cup sliced mushrooms, optional
1 teaspoon Italian seasoning
½ teaspoon dried oregano
¼ teaspoon crushed red pepper flakes, optional
½ teaspoon salt, plus more to taste
¼ teaspoon black pepper
2 cups marinara sauce or pizza sauce
¼ cup water or bean cooking liquid, as needed
1 cup shredded mozzarella cheese
¼ cup grated Parmesan cheese
¼ cup sliced black olives, optional
¼ cup mini pepperoni or chopped turkey pepperoni, optional
2 tablespoons fresh basil or parsley, chopped
Crusty bread, garlic toast, or pita wedges, for serving

How-To:
Preheat oven to 400°F.
In an oven-safe skillet, warm olive oil over medium heat.
Add onion and bell pepper. Cook for 4–5 minutes, until softened.
Add garlic, mushrooms, Italian seasoning, oregano, crushed red pepper flakes, salt, and black pepper. Cook for 1–2 minutes.
Stir in the cooked beans and marinara sauce.
Add a splash of water or bean cooking liquid if the mixture looks too thick.
Simmer for 5 minutes.
Sprinkle mozzarella and Parmesan over the top.
Add olives and pepperoni, if using.
Transfer the skillet to the oven and bake for 12–15 minutes, until the cheese is melted and bubbling.
Garnish with basil or parsley.
Serve warm with crusty bread, garlic toast, or pita wedges.
