This hearty black bean chili is packed with vegetables, tomatoes, warm spices, and High Plains Black Beans. It is a comforting, crowd-friendly chili with a little sweetness and plenty of bold flavor.
Ingredients:
4 1/2 cups cooked High Plains Black Beans
2 tablespoons olive oil
1 cup chopped onion
1 cup chopped green or red bell pepper
1 cup chopped celery
3 cloves garlic, minced
2 (14.5-ounce) cans diced tomatoes
1/4 cup raisins
2 tablespoons red wine vinegar
1 tablespoon chili powder
1 tablespoon chopped fresh parsley or 1 teaspoon dried parsley
1 teaspoon sugar
3/4 teaspoon dried basil
3/4 teaspoon dried oregano
Salt and black pepper, to taste

How-To:
Heat olive oil in a large pot over medium heat.
Add onion, bell pepper, celery, and garlic and cook until softened.
Stir in tomatoes, cooked black beans, raisins, vinegar, chili powder, parsley, sugar, basil, and oregano.
Bring to a gentle simmer.
Cook for 30–40 minutes, stirring occasionally, until the chili thickens and the flavors come together.
Season with salt and black pepper to taste.
Serve warm.
