This Classic 9 Bean Soup is a hearty, old-school soup made with High Plains 9 Bean Soup Mix, vegetables, broth, tomatoes, and simple herbs. It is cozy, budget-friendly, and perfect for batch cooking.
Ingredients:
1½ cups dry High Plains 9 Bean Soup Mix, sorted and rinsed
1 tablespoon olive oil
1 medium onion, diced
2 carrots, diced
2 celery stalks, diced
3 cloves garlic, minced
8 cups vegetable or chicken broth, plus more as needed
1 14.5-ounce can diced tomatoes
1 bay leaf
1 teaspoon dried thyme
½ teaspoon smoked paprika
1 teaspoon salt, plus more to taste
¼ teaspoon black pepper
1 tablespoon lemon juice or apple cider vinegar, optional
Parsley, for topping

How-To:
Sort and rinse the 9 Bean Soup Mix.
Heat olive oil in a large pot over medium heat.
Add onion, carrots, and celery and cook until softened.
Add garlic and cook for 1 minute.
Stir in broth, diced tomatoes, bay leaf, thyme, smoked paprika, salt, black pepper, and the dry bean mix.
Bring to a boil, then reduce to a simmer.
Cook until beans are tender, adding more broth or water as needed.
Remove bay leaf.
Stir in lemon juice or vinegar if using.
Top with parsley and serve warm.
