This Black-Eyed Pea & Greens Skillet is a simple, savory side made with High Plains Black-Eyed Peas, garlic, onion, greens, and a splash of vinegar. It is a great everyday side for cornbread, rice, roasted chicken, or barbecue.
Ingredients:
2 cups cooked High Plains Black-Eyed Peas
1 tablespoon olive oil
½ medium onion, diced
2 cloves garlic, minced
4 cups chopped collard greens, kale, or spinach
½ cup vegetable or chicken broth
½ teaspoon smoked paprika
½ teaspoon salt, plus more to taste
¼ teaspoon black pepper
1 tablespoon apple cider vinegar or lemon juice
Optional: hot sauce or red pepper flakes

How-To:
Heat olive oil in a large skillet over medium heat.
Add onion and cook until softened.
Add garlic and cook for 1 minute.
Stir in greens, broth, smoked paprika, salt, and black pepper.
Cook until greens are tender.
Add cooked black-eyed peas and warm through.
Stir in vinegar or lemon juice.
Taste and adjust seasoning.
Serve warm with hot sauce if desired.
