This 9 Bean Soup Mix Chili uses High Plains 9 Bean Soup Mix as the hearty base for a tomato-rich chili with peppers, onion, garlic, and warm spices. It is thick, satisfying, and great with cornbread.
Ingredients:
1½ cups dry High Plains 9 Bean Soup Mix, sorted and rinsed
1 tablespoon olive oil
1 medium onion, diced
1 bell pepper, diced
3 cloves garlic, minced
2 tablespoons chili powder
1 teaspoon cumin
1 teaspoon smoked paprika
1 28-ounce can crushed tomatoes
4 cups vegetable or beef broth, plus more as needed
1 tablespoon tomato paste
1 teaspoon salt, plus more to taste
¼ teaspoon black pepper
Optional toppings: shredded cheese, sour cream, green onions, cilantro, or jalapeños

How-To:
Sort and rinse the 9 Bean Soup Mix.
Heat olive oil in a large pot over medium heat.
Add onion and bell pepper and cook until softened.
Add garlic, chili powder, cumin, and smoked paprika and cook for 1 minute.
Stir in crushed tomatoes, broth, tomato paste, salt, black pepper, and the dry bean mix.
Bring to a boil, then reduce to a simmer.
Cook until the beans are tender and the chili is thick, adding more broth as needed.
Taste and adjust seasoning.
Serve with desired toppings.
