This Small Red Bean & Rice Skillet is a simple, comforting one-pan meal with cooked High Plains Small Red Beans, rice, peppers, onion, garlic, and warm smoky spices. It is hearty enough for dinner and easy to top with green onions, hot sauce, or avocado.

Ingredients:

2 cups cooked High Plains Small Red Beans
1 tablespoon olive oil
½ medium yellow onion, diced
1 green bell pepper, diced
1 red bell pepper, diced
2 cloves garlic, minced
1 teaspoon smoked paprika
1 teaspoon chili powder
½ teaspoon cumin
½ teaspoon salt, plus more to taste
¼ teaspoon black pepper
1 cup cooked brown or white rice
½ cup vegetable broth or bean cooking liquid
2 tablespoons chopped green onions or cilantro, for topping
Optional: hot sauce, avocado, or lime wedges

How-To:

Heat olive oil in a large skillet over medium heat.
Add onion and bell peppers and cook until softened.
Add garlic, smoked paprika, chili powder, cumin, salt, and black pepper and cook for 1 minute.
Stir in cooked small red beans, cooked rice, and broth or bean cooking liquid.
Cook until heated through and slightly saucy, stirring occasionally.
Taste and adjust seasoning.
Top with green onions or cilantro and serve warm.
