Savory High Plains Pinto Beans, green onions, and chili crunch are tucked inside crisp, golden pockets for a fun snack, appetizer, or party bite.

Ingredients:

1½ cups cooked High Plains Pinto Beans
4 green onions, thinly sliced
2 tablespoons chili crunch or chili crisp
½ teaspoon garlic powder
½ teaspoon onion powder
¼ teaspoon salt
¼ teaspoon black pepper
20 wonton wrappers or small pastry squares
1 egg, beaten, or water for sealing
Oil or cooking spray, as needed

How-To:

Preheat oven to 400°F and line a baking sheet with parchment paper.
Lightly mash the cooked pinto beans in a bowl.
Stir in green onions, chili crunch, garlic powder, onion powder, salt, and pepper.
Place a small spoonful of filling in the center of each wrapper.
Brush edges with beaten egg or water.
Fold and press edges to seal.
Place pockets on the prepared baking sheet.
Lightly brush or spray tops with oil.
Bake for 15–20 minutes, until crisp and golden.
Let cool slightly before serving.
