Dry Beans

Our unique taste and high-quality dry beans come from the High Plains. Eastern Colorado, Southeastern Wyoming and Western Nebraska, with higher altitudes, have cold nights / warm sunny days, dry climate, and great soil, all of which is ideal for growing Pinto and Mayocoba beans. The cold nights and warm days create denser beans, which have deeper and more complex flavors.

The beans from this region are brighter colored beans, which are more eye appealing to astute customers who are looking for the freshest beans. The dry climate supplemented by water through irrigation provides a healthy growing season to ensure pure and clean beans.

Cooking Instructions

Best if used within one year of opening. Beans are a natural agricultural product and must be cooked prior to consumption. Despite use of modern cleaning equipment, it is not always possible to remove all foreign material. Sort and rinse beans before cooking.

  • Quick Soak: Rinse and sort beans in a large pot. For 1 lb. of dry beans (about 2 cups) add 5-8 cups of hot water. Bring to rapid boil and boil for 2 minutes. Remove from heat. Cover and let stand for 1 hour. Drain soak water and rinse beans.
  • Overnight Soak: Rinse and sort beans in a large pot. For 1 lb. of dry beans (about 2 cups) add 5-8 cups of cold water. Let set overnight or at least for 6-8 hours. Drain soak water and rinse beans.
  • Cooking: Add 6 cups of hot water to drain and rinse beans. Simmer gently with lid tilted until desired tenderness is reached, about 1½ to 2 hours.
  • Serving information: A portion of uncooked beans typically doubles after cooking (e.g. 2 cups uncooked equals between 4-5 cups of cooked beans). Average serving size is estimated to be 1/4 cup of uncooked beans (56.70 grams) per person (approx. 1/2 cup or 113.40 grams of cooked beans). Based on this serving size, one 110 lb. bag (50kg) of uncooked beans will yield approximately 880 servings.
